I complain a lot about not having any talent when it comes to cooking and baking. Occasionally I post about what I’m eating or what I’ve made but it’s not anything which requires much effort. I’m going to be pretty busy this winter break but I’ll have way less in the spring so I’m going to try and take advantage of that. I should stop moaning and whining about being completely useless in the kitchen and actually learn something.

Recipe: Snickerdoodles from Vegan YumYum

The blog mistletoetreats.tumblr.com got me in the mood for Christmas cookies. Snickerdoodles are my all time fave cookie!! Isa Moskowitz’s recipe doesn’t do it for me (cornstarch is my least favorite binding agent, haha, if one can have a least favorite), but this one uses Ener-G egg replacer and lotsa butta. Bring it. I am making these VERY SOON.

Theses are great people pleasers.

Mofongo? Sofrito?

I love me some fried platanos! Can we make sofrito without pork fat?

Mofongo with veggies and olive oil and Earth Balance instead of Pork Fat?

Anyone interested in trying this out with me? Huh?

My Step Dad is Puerto Rican! So I’ve had Mexican and Puerto Rican food my entire life and adjusting it for my vegan diet hasn’t been that hard. I haven’t tried the vegan mofongo but I’d like to. Easiest meal is arroz con gandules without the meat :)
